Ingredients:

  • 1/4 cup monk fruit syrup
  • 1/4 cup soy sauce (low sodium if preferred)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 boneless, skinless chicken breasts

Instructions:

  1. Prepare the Marinade:

    • In a medium bowl, whisk together the monk fruit syrup, soy sauce, olive oil, lemon juice, minced garlic, dried thyme, black pepper, and salt until well combined.
  2. Marinate the Chicken:

    • Place the chicken breasts in a large resealable plastic bag or a shallow dish.
    • Pour the marinade over the chicken, ensuring that each piece is well coated.
    • Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for more intense flavor.
  3. Preheat the Grill:

    • Preheat your grill to medium-high heat.
  4. Grill the Chicken:

    • Remove the chicken from the marinade, letting any excess drip off.
    • Grill the chicken for 6-8 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C).
    • Discard the remaining marinade.
  5. Serve:

    • Remove the chicken from the grill and let it rest for a few minutes before serving.
    • Serve the grilled chicken with your favorite side dishes.

Tips:

  • For extra flavor, reserve a small amount of the marinade before adding the chicken and use it to brush the chicken during grilling.
