Monkfruit Pancakes Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons monk fruit sweetener
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (dairy or plant-based)
  • 1 large egg
  • 2 tablespoons melted butter or vegetable oil
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions:

  1. Mix Dry Ingredients:

    • In a large bowl, whisk together the flour, monk fruit sweetener, baking powder, and salt.
  2. Combine Wet Ingredients:

    • In a separate bowl, whisk together the milk, egg, melted butter (or oil), and vanilla extract until well combined.
  3. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined. The batter should be slightly lumpy; do not overmix.
  4. Preheat Griddle or Pan:

    • Heat a non-stick griddle or large skillet over medium heat. Lightly grease with butter or oil.
  5. Cook Pancakes:

    • Pour 1/4 cup of batter onto the griddle or pan for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
    • Flip the pancakes and cook for another 1-2 minutes, or until golden brown and cooked through.
  6. Serve:

    • Serve the pancakes warm with your favorite toppings such as monk fruit syrup, fresh fruit, or a dollop of yogurt.

Tips:

  • For fluffier pancakes, let the batter rest for 5-10 minutes before cooking.
  • Add mix-ins like blueberries, chocolate chips, or nuts to the batter for variety.
  • Keep cooked pancakes warm in a low oven (200°F/90°C) while finishing the rest.

These Monk Fruit Pancakes are a delightful and healthier breakfast option, naturally sweetened and easy to make. Enjoy them with your favorite toppings for a delicious start to your day!
